Get Creative in the Kitchen

As part of our Student Outreach team, I can say that we travel a lot. Madelyn and I are out almost every week to meet as many of you as we can at career fairs, lunch & learns, and conventions. When I get home, I like to relax a little and keep things simple. This includes the way that I prepare food. With fall fast approaching, there are tons of recipes out there that get my taste buds watering. However, cooking large meals for one leaves me with a lot of leftovers and let’s face it – you can only eat the same thing so many days in a row. I’m sure you probably face some of the same issues because you’re by yourself, don’t have the time, or simply don’t have the energy to cook yourself an extravagant meal each night.

I’ve compiled a short list of recipes that you can make as a student or travel therapist. Maximize the time you have at your new location, get out, explore, and make new friends. Don’t worry about what you’re going to make for dinner!

One Pan Fiesta Bake
“It’s ooey, gooey, and cheesy good.”

One Pot Chicken Tetrazzini
Good old fashioned chicken tetrazzini, minimal work.

Pan-Seared Salmon for One
Serve with veggies and/or rice. Voila!

One Pan Coconut Shrimp Noodle Bowls
“One pan. Creamy coconut noodles. Seared shrimp.” Mmmm!

Buffalo Chicken Pizza Sticks
Because cutting pizza into sticks is just more fun.

Upside-Down Meatball Casserole
Less than 15 minutes of prep time. Comfort food at its best!
